Pigs formed an important part in the rural economy at various levels. Many individuals would keep a pig or two, fed on scraps and food waste, to provide a source of meat, especially bacon. At the other end of the scale are intensive pig-rearing units on an industrial scale. Wiltshire is noted for processing ham and bacon. Again processing varied from the home to butchers’ shops to big factories, although Bradford on Avon did not reach the scale of Harris’ in Calne and Bowyer’s in Trowbridge.
There were usually specialist pork butchers in the town and villages.
